Bright Arugula Salad with Fennel, Green Beans and Citrus


  1. Add Arugula to a bowl, thinly slice your fennel

  2. Clean your green beans and cut in half

  3. (Fancy Term) Supreme your your citrus cut around circumference of the fruit so the meat is exposed

  4. With a paring knife cut around the two sides of the Cut toward the center, along a membrane. Then slice along the adjacent membrane until the cuts meet, releasing the segment

  5. MINDFULNESS EXERCISE: say how proud you are of yourself for learning a new skill, smile while doing so.

  6. Make your favorite dressing: for this I love a lemon vinaigrette ¼ cup lemon juice, ½ cup EVOO, Splash of White Balsamic, S+P
